We met Jose and Paul recently at their roasting warehouse in our hometown of Perth. We love the vision of theirs to bring ethical and sustainable coffee from Panama to our state, giving local enthusiasts and aficionados the pleasure of learning about the incredible journey from crop to cup. We are privileged to join them in representing Cafe Santos and the Lezcano family behind this amazing coffee.
MEET THE FARMER
Jose & Paul, owners of Fiebre Coffee, decided to bring Jose's Panamanian neighours coffee to Perth in 2015. His close relationship with the Lezcano family of Cafe Santos ensures that our connection to this farm is based upon the integrity of Jose and his love for his home country and good friends.
Cafe Santos is located in the Chiriqui Region in Northern Panama. This region is known for the worlds best coffees due to amazing biodiversity, volcanic soil and attention to detail in the farming practices.
Santos Café is made up of 6 different terrains, which present particular climatic conditions, which range from 1,000 mslm to 1,500 mslm in the Renaissance area, Chiriquí, in which they have a variety of arabica coffee with Caturra and Catuaí being the two main varietals. The farms are: El Bajo, El Potrero, El Viejito, Cristina, & Bartolo.
NOTE: Our recipes are developed using a La Marzocco Linea Classic and Mahlkonig Peak grinder, using reverse osmosis filtered water. We encourage you to use it as a starting point to experiment with your own equipment and desired taste.
